Memorial Day Weekend – Food, Friends and Fun

I’m just loving the weather here in Virginia at this time of year, I don’t think I ever really appreciated as much until now. The days are longer, the temps are still pretty mild, and the neighborhood is full of kids playing outside in the evenings.

This Memorial Day we had the pleasure of hosting family and friends to our home for our son’s 2nd birthday party.¬†Of course, the party theme was basketball, complete with a basketball cake, courtesy of my incredible husband. He’s a pretty fantastic baker and has been honing his cake decorating skills for the past few months. ¬†After testing countless recipes, including switching up the flour, he used Swan’s Down Cake Flour to perfect the perfect white birthday cake with buttercream frosting…delish! It was a huge hit!

We really did it up with a variety of homemade offerings, including Hummus, courtesy of our Blendtec, Homemade Sourdough Olive Bread (recipe coming soon), Jicama-tomato Mixed Greens Salad with Candied Pecans (recipe coming soon) and Cilantro-lime Vinaigrette, Alton Brown’s Macaroni and Cheese, our Sweet Potato and Black Bean Burgers with a Kick, and even homemade ice cream, courtesy of Williams-Sonoma Ice Cream Starters.

Was it crazy? Yes! But we love it! We spent hours in the kitchen starting Friday evening and all day Saturday, and our guests loved it, we had fun, and most importantly, we had leftovers the entire weekend!
From a health standpoint, most of the food was healthy (except the mac and cheese, ice cream and cake), and we could control the ingredients. Key for weight loss and fitness!
