Well, it seems as though we are through the fog of the first 2 weeks. Our newborn has been home with us for a little over 2 weeks, and we all seem to be adjusting…slowly. Needless to say, we took a little break on the blogging, but we are back! And given that we are at home all the time, I have really taken note of our favorite pieces in the kitchen – things we can’t live without. Here’s a look at our top 5 kitchen essentials for healthy cooking!
Expensive, but a kitchen essential worth every penny
If you don’t have a stand mixer in your kitchen, put it on your Christmas list now! My husband got me one a years ago, and initially, he used it more than I did. He prefers baking, so he tends to use it more often. But I have found that I can create some of our weekly favorites with this kitchen essential. The mixer is key for our Simply Perfect Spinach Pancakes, which are a great way to sneak the greens into our diet, and even better for our toddler!

And because we tend to eat a lot of beans, which are great plant-based proteins, we are always using our can opener. Black beans are a staple in our house, given the protein and fiber content. Given our focus on fitness and healthy eating, we are usually sneaking in a workout. On a break now, post pregnancy, but I will be back in the gym shortly.
