Simple and savory veggie burgers!

As a vegetarian for almost 4 years, there are many days that I still crave a burger.  Especially as the the summer winds down, some days are still warm enough to enjoy a cookout on the grill. But it’s not the ground beef or ground turkey that I crave, it’s the fun of building a burger, and all the toppings that come with it.  If you are like me at all, the burger and the fries are usually a vehicle for the condiments, specifically the ketchup.  Given the high sugar content, even in the Simply Heinz variety (no high fructose corn syrup), I simply crave the taste of ketchup with the saltiness of a burger…So my husband and I set out to create a veggie burger.

What are the biggest challenges with veggie burgers? #1 – they usually have very few veggies, #2 – they are often very dry, #3 – they never hold together very well, and finally #4 – they are often very bland and have no flavor.  Well, after countless recipes and attempts at our veggie burger, we landed on the Sweet Potato and Black Bean Burger with a Kick!  This burger answers all of the challenges listed above.  It’s chock full of veggies – sweet potato, onions, mushrooms, kale, and carrots. The sweet potatoes, mushrooms and black beans keep the burger quite moist and the tofu helps to hold the burger together quite well when searing it on a skillet.  And finally, the burger is spiced with onion, garlic, chili powder, cayenne, cumin, paprika and fresh cilantro.  Finally, one patty is only 186 calories, and packs 8g of protein! We make these all the time and they are a hit!  Enjoy!
