Description

Chase away those cold dreary nights with this hearty satisfying vegetable soup. Plus when it's homemade, you know all the ingredients, you can control the sodium and spices. Make this one your own by adding the spices you love the most!

Ingredients

Directions

1. Cook quinoa or rice according to package
2.In large saucepan, add 2 bags frozen mixed
veggies (try to avoid mixes with corn), 1 can
diced or crushed tomatoes, 1 jar spaghetti sauce and 2-4 cups vegetable broth to your desired consistency.
3. Season according to taste. We like salt/pepper/oregano and 1 bay leaf.
4. If you want to add some healthy grain to this, feel free to add in COOKED brown rice or quinoa. Quinoa is always your healthiest grain choice.
