Chorizo Seitan And Bean Chili

Fry your red onion, red pepper and garlic in a teaspoon of extra virgin olive oil on a medium heat in your non-stick pan for 3 minutes or until softened.
Add your chorizo Seitan, beans, tomato purée, chilli powder, cumin, mixed herbs and paprika and mix all together.
Add the water, stir thoroughly and simmer for 15-20 minutes.
Serve the chili over a baked sweet potato.
Top with the chilli, avocado and a bunch of arugula.
